unfortunately, I have not, but I could imagine taking leftovers and throw them into an egg casserole, something like a frittata or such. If the consistency doesn't matter, mash them, and add them to the casserole or how about making potato pancakes or little tater tots :)
Since the Japanese potatoes are a bit softer in general, you could also consider trying to fry them in the pan one more time to give them a little texture before adding them to another dish.
