During summer time, you are seeing corn everywhere. Mostly the standard preparation, not because it is so boring, but because it is simply good. A summer BBQ with corn and some butter or garlic infused butter - this happens at many houses around the world. Celebrating a classic.
Some take it further, corn salads and salsas to really dive in and celebrate corn and its variety. Food blogs do all the work to make corn sound more appealing and actually show you that there is so much we can do with this buddy.
I personally like corn, but I am not intrigued nor motivated enough to do something special with it. I am cool just using it for my salad, adding it to my chili, or offering it at a BBQ celebration. I am a simple gal.
But then, there are days, where I am experimenting. Especially for the second e-book drop, I needed and wanted to work on standard things to not only impress you, but myself. There is always room to grow and improve, right?
This is when I threw corn in my pan and decided to give it some extra texture and a smooth finish by adding miso paste. The rest is history.
I do not only like this as a side dish which everyone will love, but this can also be great for your salad when you are sick and tired of a boring green salad.
This recipe is a keeper!
MISO BUTTERED CORN
YOU NEED 285g corn (canned corn is totally fine) + 1 big tablespoon white miso + 1 1/2 tablespoons butter + 1 teaspoon sesame or gomasio + some panko for decoration
1. Seperate the corn from its liquids from inside the can and throw it into a pan together with the butter.
2. Put the party on high temperature and add the miso — toss everything well. We want the corn to get roasted beautifully with all the flavors of the butter and the miso.
3. Let the corn roast for a couple of minutes, but make sure that the miso paste is not burning. Shake the pan and watch the corn turn into a beautiful golden color.
4. Once the corn is beautifully roasted and fragrant, put it onto a plate and sprinkle it with some panko.
I know that many people are still not on the miso train yet. Now it is time to join and get in, friends! This ingredient will turn your kitchen upside down - for the best!
